What is one of your favorite experiences which you’ve been able to build for guests?
I love taking guests to a tiny mountain village in Crete where a local shepherd welcomes us into his home. We taste fresh cheese, wild honey, and raki straight from his barrel, experiences no restaurant can ever replicate.
