You will be picked up from your hotel at 11:30 am and will be taken to Ojos Negros Valley, around one hour trip from Ensenada to the first stop, La Cava de Marcelo in Rancho La Campana, an internationally recognized organic farm. Once arrived, you can have a drink (own expenses) while enjoying the yard or take pictures around this countryside special place, till the first guided tour starts, around 10-15 minutes later. On the tour, you will have a 15 minutes walk to the barns, where you will learn about crop production, livestock care, and the cheese-making process. Around 45 minutes later, you will be back to the main building on the farm and taken down to the underground cellar (not wheelchair accessible), where you can just sink your teeth into quality cheeses during a tasting paired with wine from the house, and other craft products (products vary depending on the season). After the tour, order lunch at the gourmet restaurant (own expense), whose menu features contemporary Mexican cuisine is sourced with local ingredients from Ojos Negros and Valle de Guadalupe. All dairy is fresh from the cows of Rancho La Campana. You will be taken back to your hotel at around 4:30 pm. You will have bottled water and snacks during the tour.
